It is time to FIESTA!! I LOVE Mexican food and celebrations. Every time we go out for supper I always want Mexican food… somehow I just can’t seem to get enough of the flavors!! Maybe it’s because where I grew up, the closest thing we had to authentic Mexican food was ‘Taco Time’ and somehow I don’t think tater tots are considered Mexican food even if you label them ‘Mexi-Fries.’ That aside, I still like to eat at ‘Taco Time’… or anywhere else since that means I don’t have to cook!! {wink!}
Back to the Fiesta! Look at these gorgeous invites!! I was totally inspired by this printable from the 36th Avenue that I used last Cinco De Mayo. We hosted an awesome Cinco De Mayo printable blog hop and I loved the “Fiesta Like There Is No Manana” sign. {Plus my husband thought I was super clever when I put it up!} You can invite just your spouse OR go big and invite a few of your favorite friends!
I had designer Courtney with All Things Bright and Beautiful create invites, awards, and recipe cards that all coordinated and I just LOVE the results. She is so talented!! Invite your guests to prepare and share their favorite recipe for salsa or guacamole. All you will have to supply are the chips and these fun awards.
If you want to make this a tasty dinner party, then marinate some chicken breast and add some fresh green and red peppers and sliced onions to make delicious fajitas.
The most fun we’ve had making dinner is on our Swissmar Raclette Grill. You just put it on the middle of your table and everyone uses the grill to cook their own food. We’ve had so much fun using ours on New Years, for birthdays, holidays like this, and pretty much anytime we are in the mood for a little fun at the dinner table.
Pass out the recipe cards for guests to fill in so everyone can take home some new tasty salsa and guacamole recipes. Yum!!
Speaking of sharing recipes, I have two totally delicious recipes that two great friends have shared with me and I have made time and time again. Chunky Corn Salsa- Michelle W. 2 medium tomatoes, chopped 1 can corn, drained 1 can black beans, drained ½ bunch chopped cilantro ½ bunch green onions Italian dressing- to taste 2 avocados, if desired Mix all together and serve with tortilla chips. or if you are in the mood for a little less chunky try this next one Restaurant- Style Salsa- Ana 2 cans diced tomatoes ½ tsp pepper ½ bunch cilantro 1 tsp salt 1 T lime juice 1 tsp minced garlic 1 tsp sugar ½ yellow onion 1 small can El Pato Jalapeno Salsa Sauce ½ bunch green onions Put all the ingredients in the blender and mix to desired consistency. Add chopped green onions last. Good with any additions you may want to try.
As for my great guacamole recipe…..well…
This is it! {wink} Funny, I know but it is actually really good!!! I have to tell you that I had never even seen guacamole {or refried beans for that matter} until I was in college. So if you have an amazing guacamole recipe you would be willing to share with me {or salsa} I would love it if you leave it in the comment section! My husband would be more than willing to sample new recipes, I am quite sure.
To finish off your meal, you may need a sweet dessert! I am a lover of fun kitchen ‘stuff’ and picked these fun Perfect Tortilla Pan Set up the other day. They are so awesome!! In 5 minutes you have fun little shells that you can use for taco salads, putting guacamole or salsa in, or making a fun dessert cup! A tasty way to end your fantastic day!
